It can replace the cake, not just sit next to it
Here is the part that matters if you are watching the budget.
A tiered wedding cake is one of the most reliably wasted line items at a wedding. You pay for the tiers, you cut two slices for a photo, the caterer plates the rest, and a meaningful share of it goes home in a box or in the bin.
If dessert is being handed to every guest by a person walking the room, you may not need a big cake at all. A small cutting cake for the photos, plus a roaming dessert everybody actually eats, is often cheaper than a full tiered cake and it gets finished. Price both before you assume the cake is compulsory.
We are not saying skip the cake if you want the cake. We are saying most couples never price the alternative, because nobody ever suggests there is one.
Why we would rather it roams
Selfish reason, honestly stated. When dessert goes out on a table, fifty people stand up and walk to a wall, and a fair number of them keep going — bathroom, bar, outside. You lose the room for twenty minutes right when it was warm.
A tray that comes to your guests does not do that. They stay where they are, which by that point in the night should be near the dance floor.

When to skip it
Guest experiences are the easiest thing on a wedding budget to over-buy, so here is the honest version.
Skip it if you have already booked a dessert bar or a late-night snack. Two desserts means one gets eaten and one gets photographed. Pick the one that comes to people.
Skip it if your reception is a seated dinner with a plated dessert course — the roaming format needs a room that is up and moving to be worth the money.
Book it if you have a bar, a dance floor, and a crowd on its feet. And ask about it in the same conversation as the cake, not after you have already ordered one.
